The Easiest Ever Christmas Cake
1 - One box of Rich Fruit Cake Mix makes a 7" round or 6" square cake. Simply follow the easy step by step instructions on the box, not forgetting to line your cake tin well with greaseproof paper. Clean and dry your cake board with a little cooled boiled water and kitchen paper, then turn your cake upside down and position onto the centre of the board. Boil and sieve a small amount of apricot jam before spreading it over your cake.
2 - Sprinkle some icing sugar over your work surface then knead and roll out 500g of marzipan large enough to cover your cake top and sides
3 - Once you have smoothed the top with a cake smoother, work down the side of the cake cutting off any excess icing against the board for a neat finish. Brush the marzipan in either sherry, brandy or cooled boiled water and cover the cake in white sugarpaste using exactly the same method as for the marzipan.
