Gingerbread is a traditional favourite at Christmas, so we love this alternative Christmas cake design of a cookie jar, decorated with freshly baked gingerbread cookies. Our ‘cookies’ have in fact been made using sugarpaste, but you can choose whether to do the same or alternatively bake real gingerbread cookies.
Tall 7 inch round cake (we used 1kg Sattina golden delight Madeira cake mix baked in 3 layers)

This design shows how versatile using just one mould can be, offering a range of different flowers and foliage. We particularly like the effect achieved from brushing the mould with sparkling sugar before pressing sugarpaste into it as it gives a very seasonal frosty look.
