Sugar Diamonds

Add a touch of opulence to your cakes and cupcakes with sugar diamonds. These look absolutely fantastic on cakes but it is important that you follow the handling and storage guidelines so that they do not mist over as they are affected by humidity.

Try not to touch the edible diamonds directly with your hands – use tweezers and attach them to a cake using stiff royal icing in the same colour as the coating of the cake. If possible, place them on as near to the event as possible or even at the last minute to avoid exposure to the atmosphere.
